Seasonal vegetables and fruit – March (plus recipe)

This month we are using spinach for the seasonal recipe!

Recipe: Spinach strudel with feta cheese and mushrooms

The finished spinach strudel

Ingredients:

  • 1 puff pastry
  • 400g spinach (fresh or frozen)
  • 2 handfuls of mushrooms
  • 1 large onion
  • 2 cloves of garlic
  • 200g feta cheese
  • salt
  • pepper

Preparation:

Chop the onion, garlic and mushrooms and sauté in a pan with butter. Now add the spinach – steam the fresh spinach until the leaves collapse, steam the frozen spinach until it is completely defrosted. Season the spinach mixture with salt and pepper and leave to cool. Now add the feta cheese – simply crumble it in by hand and mix. Spread the spinach mixture over the puff pastry and fold the pastry into a strudel. Then turn the strudel over and prick the top several times with a fork. Bake the strudel in a preheated oven at approx. 180°C for approx. 30 minutes. Serve with a yogurt or sour cream dip – done!
